Chili, Lime and Cumin Cod

In August I went to Seattle for my friend's wedding and had authentic and super fresh fish and chips. Ever since, I pretty much crave cod fish constantly. Whenever it is on sale I buy it, though it is never as fresh and delicious as what I had in Seattle. One of the downfalls of living several states away from the nearest ocean... 

Fish is one of the leanest and healthiest meats there is. Throw it in the oven with some veggies and you have an easy, tasty and low-calorie meal. 


Chili, Lime and Cumin Cod


2 lbs fresh cod fillets
1 tsp chili powder
1/2 tsp dried oregano, parsley, or cilantro
1/2 tsp salt
2 tbsp butter
1/4 tsp cumin
1 lime, juice of

Heat oven to 450 degrees. Coat oven safe pan with oil or cooking spray. Place cod in pan. Sprinkle chili powder, herb, and salt. Roast 5-7 minutes until opaque. Melt butter in small saucepan. Add cumin and lime juice and cook for 1 more minute. Before serving drizzle butter mixture over cod. Serve with your veggie of choice and/or with rice.
