Black Bean and Salsa Soup

This is one of my favorite soup recipes!  It is full of healthy ingredients and very easy to make.  You can certainly adjust it to add more or less of what you like.  I always add a little more chicken because I like it meatier.  Enjoy!

Black Bean and Salsa Soup
3/4 cup chopped celery
1 med. onion, chopped
3 garlic cloves, minced
1 Tablespoon oil
3 cans (14 1/2 oz. each) chicken broth
2 cans (15 oz each) black beans, rinsed and drained
1 jar (16 oz) salsa
1 cup shredded cooked chicken breast
1 cup cooked rice
1 tablespoon lime juice
1 teaspoon ground cumin

In a large saucepan, sauté celery, onion, and garlic in oil until tender.  Stir in the remaining ingredients; heat through.
