Why does oatmeal have that slime?

A certain female I love refuses to eat oatmeal because of the slime produced while cooking it.  I didn't know about this until a few weeks ago. When she told me this, I realized I would be eating a lot of oatmeal for the next few months to clean out our supply before we move. So this morning I tried a new oatmeal recipe:

1 packet baked apple instant oatmeal with water
1 handful frozen raspberries
1 handful salted almonds

The calorie count was less than 250. The intrinsic heart health of oatmeal is exciting, and the raspberries and almonds more than made up for the slime.
