I had a great week. It was a super busy week, it wasn't a week filled with totally healthy eating, but my workouts were hard and I felt good. Then I weighed in. I had gained close to 5 pounds! How is that possible? Water retention, right?! I'm trying to move forward and not think about it too much.
So I've been enjoying chicken salad these last few weeks for lunch. I make it with a can of chicken chunks from Sam's Club. I add in a whole chopped apple, a cup of grapes, pickles, cucumbers, 2 celery stalks, and a few Craisins if I have them. I pour in a bit of pickle juice and use only 2 Tablespoons of Light Miracle Whip. The apples and grapes add so much good flavor you don't need much dressing. I usually eat it over a bed of spinach greens and lettuce. One batch can be used for about 3 servings for me. It is a super low calorie lunch, but tastes great and gives me a little energy boost. Plus tons of fruit and veggies for the win!
