Healthy veggie recipe

I cut up broccoli, carrots, cauliflower.   Throw in a can of olives and a carton of grape tomatoes. Then I slice up four string cheese, in to small disk shapes. Then I mix 1/4 c. red wine vinegar, 1/4 c. EVO, and 3 TBS dry ranch dressing (1 packet). Mix the dressing over the veggies.  This is soooooo good! It is even better the next day.....but most of the time we have no left overs.  I also love to use pepper jack cheese instead....a little kick is always good.
