Tortilla Soup

One of a favorites at our house is this amazing and simple Tortilla Soup.  And it's incredibly easy to make it extra light on the calories by choosing less chips to add in your bowl and pile on the tomatoes and cilantro. Yummy!  I love to just throw it all in the crock pot!  Frozen chicken and raw onion and all!

TORTILLA SOUP
(Can be made in Crockpot)



1 TB veggie oil
1 onion – minced
1 jalapeno, seeded and minced (I just use some jalapeno slices from a jar and mince them)
1 TB chili powder
2 garlic cloves – minced
8 cups chicken broth
1 – 2 chicken breasts (can use canned chicken for a very quick dinner)
2 TB lime juice




Toppings~ tortilla chips, tomatoes, avocados, fresh cilantro-coarsely chopped, cheese, black beans, rice
Sauté garlic, jalapeno, chili powder, and onion in veggie oil.  Add Chicken broth and chicken and simmer until chicken is done, about 15 minutes. Remove chicken, let rest, then shred or chop and add back to broth.

Remove broth from heat, add lime juice. Layer a bowl with desired toppings, and ladle broth on top of layers, and enjoy.



~for Crockpot- (omit oil for crock pot) add all ingredients except the lime juice into crock pot and cook until chicken is done-  low for 4- 6 hours ( MY rice cooker crock pot does it in 2 hrs) . Remove chicken, let rest for 5-10 min, shred, and replace in pot.  Add lime juice, and ladle over desired toppings in bowl.
