I love fruits and vegetables, so last week's challenge was pretty easy for me. However, sometimes I just couldn't get in that last 1/2 cup of vegies. I've never been a huge V8 fan, but I had some 5.5 oz cans in my pantry, so one day I drank one, and well, it was pretty good. AND it's an entire vegetable serving in one little can! AND it's only 30 calories. Just make sure to get the low sodium kind.
