I have no problem eating 3 cups of veggies a week but Ashley hates them. So this week got creative in our meals to include veggies. Ashley thought that she hated cauliflower but after she tasted it realized she didnt.... We made cauliflower mashed potatoes that were great and we also had cauliflower tacos casserole. Instead of using a taco shell we baked cauliflower and then put meat, cheese, rice, beans, and corn on top...it was amazing!
How do you do these cauliflower shells? I think I need a recipe!!!
